After trying the famous Tillamucks last year and being so pleased by the taste, I knew I had to get my hands on a few to try it out.
I finally decided to make my own, and it was so easy!
I decided to use fresh and locally sourced cheese from Tillamakes farms and cut up some of the loaves into little pieces.
The whole process took less than an hour.
Here’s how I did it:Step 1:Prepare a 1/2-cup measuring cup.
Step 2:Cut up the loaf into little chunks and add them to the measuring cupStep 3:Stir the ingredients together in a medium saucepan and bring to a boil.
Step 4:Lower the heat and let the mixture simmer for 15-20 minutes until the cheese is fully melted.
Step 5:Strain the cheese out of the saucepan, set aside and allow it to cool for at least 3 hours.
Step 6:Once cool, transfer to a blender and blend until smooth.
Step 7:Return the mixture to the saucepot and add more fresh lemon juiceStep 8:Add the chilled loaves to the blender and purée until smoothStep 9:Stick the loams into a bowl and garnish with a slice of lime, if desiredStep 10:Enjoy!
